This is a super easy, super tasty recipe. Doug gave it his stamp of approval to have again. Now you should know by now, that I'm not in to portions and following directions, so this is just a starting place.....
Chicken
Taco seasoning
Jalapenos or Chilis
Cheddar Cheese
Corn chips
2 rolls croissants
Sour cream
Salsa
Cook the chicken in a crockpot on low with 1/2 a package of taco seasoning and water. About 45 minutes before you want to eat begin assembling the ring.
Mix together drained chicken, the rest of the taco seasoning, jalapenos or chilis to taste, 1 cup of cheddar cheese, 1/4 cup of crushed corn chips. (Feel free to add other things like Rotel, black olives, onions, etc)
On a round baking stone or pan, put the croissant pieces overlapping in a circle (pointed ends out).
Spread the chicken mixture on the wide end of the croissants where they overlap.
Fold the pointed tips in and tuck under.
Cover in cheddar cheese. Bake for 35 minutes at 325 degrees.
Serve with sour cream and salsa.
